- 2½ cups small shell pasta
- 1 tablespoon extra-virgin olive oil
- 1 small yellow onion, chopped
- 5 cups broccoli florets, chopped stems, and leaves
- ¼ cup toasted pine nuts
- Lemon wedges for serving
- 1½ cups cooked white beans, drained and rinsed
- ¼ cup vegetable broth (plus extra as needed)
- 3 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- ¼ cup nutritional yeast
- 1 garlic clove, minced
- ¼ teaspoon onion powder
- ½ teaspoon sea salt
- Freshly ground black pepper
Method:
- Blend all sauce ingredients until smooth and set aside.
- Cook pasta according to package directions until al dente. Then drain.
- Heat olive oil in a large skillet and sauté onion for 5 minutes until soft
- Add broccoli stems, cook 3-5 minutes until tender
- Add florets and leaves with a splash of broth, cover and steam 2-3 minutes until bright green
- Combine pasta with ¾ of the sauce, adding broth if needed
- Season to taste, top with remaining sauce and pine nuts, serve with lemon wedges
5-Minute No-Bake Vegan Cheesecake
