👨🍳 Mini Quiches
📋 Ingredients:
- 300g shortcrust pastry
- plain flour, for dusting
- 4 rashers back bacon, fat trimmed, chopped
- oil, for frying
- 100g gruyère cheese, grated
- 2 medium eggs
- 125ml double cream
- Begin by rolling out the pastry onto a lightly floured surface until it's thin. Cut out circles slightly larger than your tartlet tins. Line the tins with the pastry circles, pressing them gently into the edges and up the sides. If you have more pastry than tins, you may need to bake them in batches. Once all tins are lined, chill them for about 30 minutes. If you're baking in batches, chill the off-cuts of pastry as well.
- Preheat your oven to 200°C/180°C fan/gas 6. Line each pastry case with a piece of foil and fill them with baking beans or uncooked rice. Bake them for 10 minutes, then remove the foil and beans and bake for an additional 5 minutes. While the pastry is baking, fry the bacon in a little oil until it's crisp.
- Once the pastry cases are pre-baked, divide the crispy bacon and half of the cheese between the cases. In a separate bowl, beat together the eggs and cream. Pour this mixture over the bacon and cheese until the cases are almost full. Scatter the remaining cheese on top. Bake the tartlets for 20-25 minutes or until they're golden and puffed up. Let them cool, then chill before serving. These tartlets can be made a day ahead for convenience!

📋 Ingredients:
- 450g cream cheese, softened (2 packs)
- 42g Hidden Valley® Original Ranch® Seasoning Mix (1 packet)
- 125g shredded sharp cheddar cheese
- 5 flour tortillas
- 125g finely chopped ham
- 125g chopped spring onions
You can also make any other type of versions by adding salmon, avocado, or anything you like!
- Mix softened cream cheese with Ranch Seasoning Mix until smooth.
- Spread the mixture onto flour tortillas, then sprinkle with shredded cheddar cheese, chopped ham, and chopped spring onions.
- Roll up tightly, chill, then slice into bite-sized pieces. Enjoy your flavorful tortilla rolls!
👨🍳 Burrata Bruschetta
📋 Ingredients:
- 1 Baguette
- 3 tbsp Olive oil
- 1-2 Garlic cloves, peeled
- 2-3 cups Cherry tomatoes, halved
- ¼ Red onion, very thinly sliced
- ½ cup Basil, chopped or torn
- 1 tbsp Balsamic vinegar
- Salt and pepper, to taste, flaky salt, balsamic glaze, more olive oil, and basil for garnish.
- Toast baguette slices with 2 tbsp olive oil until golden. Rub with garlic cloves.
- Mix tomatoes, red onion, basil, 1 tbsp olive oil, balsamic vinegar, salt, and pepper.
- Spoon tomato mixture onto toasted bread. Garnish with flaky salt, balsamic glaze, olive oil, and basil. Enjoy!
