Lunar new year: sweet and sour chicken

Ingredients

  • 2 chicken breasts, cut into bite-size pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 tablespoons vegetable oil

For the sauce:

  • 3 tablespoons ketchup
  • 1 tablespoon white vinegar
  • 1 teaspoon brown sugar
  • 2 tablespoons soy sauce
  • 100ml water

Method

  1. Heat oil in a pan. Cook chicken until browned. Remove and set aside.
  2. In the same pan, add bell peppers and onion, sauté until soft.
  3. For the sauce, mix ketchup, vinegar, sugar, soy sauce, and water in a bowl.
  4. Add the sauce to the pan with vegetables. Bring to a simmer.
  5. Return the chicken to the pan. Cook together for 5-10 minutes until the sauce thickens.
  6. Serve with rice or noodles.
