Chef's recipe: Chorizo and cherry tomato linguine

This pasta dish is a real hit. It’s a very easy and fast to make a comfort dish.
Ingredients
- 1 ring of chorizo
- Cherry tomato 1 box
- Tomato paste 100g
- Chicken stock (stock cubes)
- Linguine
- Italian hard cheese (parmigiano, pecorino, Grana Padano)
- Fresh basil
- Oil
- Salt and pepper by taste
Method
- Make your chicken stock from the cube. Put half a stock cube in 250ml of hot water, and let it dissolve. Make sure you mix it up before use.
- Put a bigger pot of water for the pasta, when it's boiling put some salt and cook your linguini for about 10 minutes.
- Cut your chorizo into 1 cm small cubes.
- Heat up a dash of oil on medium heat, then bang in your cherry tomatoes and the chorizo. Fry it till the chorizo lets out its spicey oil.
- Stir in your tomato paste, then gradually add your chicken stock, make sure you are not making the sauce too thin, we are looking for a creamy texture.
- When your pasta is ready add it to your sauce and mix it up.
- Put your pasta on a plate decorate it with fresh basil, and top it with Italian hard cheese.
