Looking for a quick and budget-friendly meal that’s perfect for busy schedule? This easy Spanish omelette recipe is packed with simple ingredients like potatoes and eggs, making it a delicious and filling option for any time of day!

Ingredients

  • Olive oil
  • 10 eggs
  • 6 potatoes (big)
  • 1 onion (optional)
  • Salt

Preparation:

  1. Peel the potatoes, wash them, and slice them into not-too-thin rounds. You can use a mandoline if easier. Make sure to dry them well to remove any starch.
  2. Fry the potatoes in plenty of olive oil until they resemble fried potatoes. Drain and set aside.
  3. Beat the eggs and season with salt. Mix the still-warm potatoes with the eggs. The amount of egg to use depends on the volume of potatoes, as not all potatoes are the same size. 6 big potatoes, 10 eggs. You can also do 5 regular size potatoes – 6 eggs. (At least 1 more egg than potatoes)
  4. Let the mixture rest so that the potatoes absorb some of the eggs.
  5. Heat a pan with a drizzle of oil over medium heat. Pour the egg and potato mixture into the pan and let it set.
  6. Add the onion if you like. Use a plate to flip the tortilla and wait for it to cook on the other side.
  7. The doneness of the tortilla depends on your preference. For a more well-done tortilla, cook over low heat for a longer time; for a less well-done tortilla, cook over higher heat for a shorter time.
