Pisto (Spanish vegetable stew) recipe

Fresh, flavoursome and affordable - the perfect veggie dish

Try our hearty and nutritious pisto recipe which combines fresh veggies like tomatoes, peppers and courgettes all in one-pan!

Ingredients:

  • Courgette
  • Tomato
  • Green pepper
  • Red pepper
  • Onion
  • Aubergine
  • Garlic
  • Oil
  • Salt

Preparation:

  1. First, cut all the vegetables into small pieces.
  2. In a pan with a drizzle of oil, start adding the ingredients. First, add the garlic, sliced thinly, and the onion. Let them cook until they begin to get some colour
  3. Next, add the peppers and tomato.
  4. Then, add the aubergine and let it cook until it starts to colour and integrate with the rest of the vegetables.
  5. Finally, add the courgette (in the last 20 minutes). Adjust the salt as desired during this process.
  6. Let everything fry together and allow all the ingredients to integrate well. Once it reaches the typical texture and colour of pisto, it's ready to enjoy.
  7. A fried egg on top of pisto adds a perfect touch. The combination of the rich vegetables and the runny yolk is simply amazing.
