Patatas bravas recipe

If you're craving a taste of Spain without leaving your kitchen this easy patatas bravas recipe is sure to elevate any meal of snack time!

Ingredients:

  • 500g of tomato
  • 100g of serrano ham
  • 1 tablespoon of sweet paprika
  • 1/2 tablespoon of hot paprika
  • 1 tablespoon of oregano
  • 1/2 tablespoon of cumin
  • Sherry vinegar
  • 3 potatoes
  • 50 g of concentrated tomato paste
  • Salt
  • 2 bay leaves
  • 4 garlic cloves
  • 1/2 chili pepper
  • 1 onion
  • Olive oil

Preparation:

  1. Cut the potatoes into cubes, wash them to remove the starch, and confit them in olive oil at low temperature (until small bubbles start to appear) for 10 minutes.
  2. Finely chop the onion and garlic. In a pan with hot olive oil, first add the garlic, then the bay leaves. Once the garlic starts to "dance," add the onion.
  3. Add the chili, sweet paprika, and hot paprika. Mix everything well.
  4. Add the vinegar and let it reduce. Then, add the cumin and oregano.
  5. After a few seconds, add the ham and grated tomato, followed by the concentrated tomato paste.
  6. Let the mixture reduce for 5 minutes. Remove the chili and bay leaves, then blend the sauce.
  7. For the confit potatoes, raise the oil temperature until they are golden and crispy.
  8. Place the potatoes on absorbent paper to remove excess oil.
  9. Plate the potatoes and accompany them with the salsa brava.
