Ingredients:
- 500g of tomato
- 100g of serrano ham
- 1 tablespoon of sweet paprika
- 1/2 tablespoon of hot paprika
- 1 tablespoon of oregano
- 1/2 tablespoon of cumin
- Sherry vinegar
- 3 potatoes
- 50 g of concentrated tomato paste
- Salt
- 2 bay leaves
- 4 garlic cloves
- 1/2 chili pepper
- 1 onion
- Olive oil
Preparation:
- Cut the potatoes into cubes, wash them to remove the starch, and confit them in olive oil at low temperature (until small bubbles start to appear) for 10 minutes.
- Finely chop the onion and garlic. In a pan with hot olive oil, first add the garlic, then the bay leaves. Once the garlic starts to "dance," add the onion.
- Add the chili, sweet paprika, and hot paprika. Mix everything well.
- Add the vinegar and let it reduce. Then, add the cumin and oregano.
- After a few seconds, add the ham and grated tomato, followed by the concentrated tomato paste.
- Let the mixture reduce for 5 minutes. Remove the chili and bay leaves, then blend the sauce.
- For the confit potatoes, raise the oil temperature until they are golden and crispy.
- Place the potatoes on absorbent paper to remove excess oil.
- Plate the potatoes and accompany them with the salsa brava.
Enjoy!
