Chef's recipe: Shakshuka

Shakshuka is a heart-warming comfort dish from the Middle East. It is very popular in a lot of countries and there are many different varieties of it. You can use many vegetables like aubergine, courgette, spinach etc. I really like the version with chickpea.

Ingredients

  • Onion
  • Bell pepper
  • Chopped tomato can
  • 2-3 Egg
  • Olive oil
  • 2 cloves of garlic
  • 2 teaspoons paprika powder
  • 2 teaspoons cumin powder
  • Chilli by taste
  • 1 small can of chickpea
  • Salt and pepper by taste
  • Fresh parsley and coriander

Method

  1. Heat up a drizzle of olive oil in a frying pan or skillet. Add the chopped bell pepper and onion and sauté it for about 5 minutes, till your onion goes light brown. 
  2. Add in your finely chopped garlic and the spices and sauté it for another minute. Make sure you are not burning your spices.
  3. Pour in your chopped tomato and simmer it till it starts to break down. Season it with salt and pepper (by taste/preference).
  4. Drain your can of chickpeas and add it to your sauce, let it simmer for another 5 minutes.
  5. Make little holes in the sauce and crack your eggs in. Cook it for 5-8 minutes (depending on how well done you like your eggs). I like it quite runny, so usually I cook it for 5-6 minutes.
  6. Garnish with the fresh herbs before serving.
