Black History Month - Nigerian Yam Porridge

Yam porridge, also known as Asaro, is a popular Nigerian dish known for its rich, comforting flavours and nutritious ingredients. It combines yam with palm oil, tomatoes, onions, and spices to create a wholesome, hearty meal.

Ingredients (serves 4)

  • 1kg Yams/sweet potatoes (peeled and diced)
  • 3 Tomatoes (chopped)
  • 2 Red peppers
  • 2 Medium onions (chopped)
  • 2 Scotch bonnets
  • 200ml Oil 
  • Salt and pepper 

Method

  1. Blend the peppers, one onion, scotch bonnets and tomatoes.
  2. In a pot, heat palm oil and fry the second onion until soft.
  3. Chop up the peeled yams.
  4. Blend the mixture with the chopped yam/sweet potatoes, then season with salt and vegetable bullion.
  5. Boil for around 20-25 minutes until cooked, then mash the mixture slightly and leave to simmer till it’s cooked thoroughly.
