Black History Month - Nigerian Yam Porridge

Yam porridge, also known as Asaro, is a popular Nigerian dish known for its rich, comforting flavours and nutritious ingredients. It combines yam with palm oil, tomatoes, onions, and spices to create a wholesome, hearty meal.
Ingredients (serves 4)
- 1kg Yams/sweet potatoes (peeled and diced)
- 3 Tomatoes (chopped)
- 2 Red peppers
- 2 Medium onions (chopped)
- 2 Scotch bonnets
- 200ml Oil
- Salt and pepper
Method
- Blend the peppers, one onion, scotch bonnets and tomatoes.
- In a pot, heat palm oil and fry the second onion until soft.
- Chop up the peeled yams.
- Blend the mixture with the chopped yam/sweet potatoes, then season with salt and vegetable bullion.
- Boil for around 20-25 minutes until cooked, then mash the mixture slightly and leave to simmer till it’s cooked thoroughly.
