Chef's recipe: Breakfast muffin and poached egg

Guacamole is a very easy-to-make, fresh and healthy Mexican delight. It's also vegan, and budget-friendly. This dish is the perfect way to start your day.

Ingredients

  • 2 ripe avocado
  • 1 lime
  • 1 fresh red chilli
  • Half bulb of red onion
  • cloves of garlic
  • Half bell pepper
  • 1 tomato
  • Fresh coriander
  • 1 egg 

Method

  1. First we need to cut our avocados in half, with the help of a knife, and take out the seed. Then with a spoon, we can scoop out the avocados and put them in a bowl. Mash them up with a fork till you get a rustic creamy texture.
  2. Chop your red onion, chilli and bell pepper into tiny (1cm) pieces and put them in your avocado paste.
  3. Cut one tomato into wedges and with a knife, take out the soft part with the seeds and cut them into small pieces. Chop a little bunch of coriander roughly and add them to your bowl. Squeeze a good dash of fresh lime in the guacamole and add salt and pepper by taste. Give it a good stir and your guacamole is done.
  4. In the meantime, put a small pot of water to boil. Then reduce the heat, we need the water to simmer softly. Give a little stir to make a little whirlpool in the middle of the pot, then break your egg and gently put it in the water and cook it for about 3-4 minutes. Some people like to put a dash of vinegar in the water but is not essential.
  5. Warm up your breakfast muffins and cut them in half. Spread a thick layer of guacamole, then gently put your poached egg on top. Enjoy!
